How to Make Creamy White Sauce Pasta at Home

White sauce pasta has never been my go-to in restaurants. I usually stick to pink because my Alfredo experiences have been pretty hit or miss—honestly, more miss than hit. If you’re anything like me, you’re not a fan of heavy cream, but you still can’t say no to a good, creamy pasta. If that sounds like you, you’re going to love this recipe. I was actually surprised to find out how easy it is to make Alfredo sauce at home. So I made it on a random weekend during my 3 pm kitchen shenanigans, and it turned out amazing. If you wanna enjoy some seriously creamy pasta, here’s a recipe that will have you drooling!

Creamy White Sauce Pasta Recipe

Ingredients:

  • Pasta of choice – 1 cup
  • Milk – 350-400 ml (prefer full cream milk for a richer texture)
  • All-purpose flour (Maida) – 2 tbsp
  • Butter – 100-150 g
  • Carrot – 1, thinly sliced
  • Capsicum – 1, chopped
  • Broccoli – 200 g, chopped
  • Baby corn – 3, diced
  • Garlic – 7-8 cloves, finely chopped
  • Ginger – 1-inch piece, finely chopped
  • Chilli flakes – 2 tbsp
  • Pepper – 1 tsp
  • Salt – 1 tsp
  • Oil – 1 tbsp
  • Cheese – 50 g, grated

Note: Feel free to add or skip any vegetables as you like. I had to make do with whatever was available in my kitchen.

Procedure:

Boil the Pasta:

  • In a deep vessel, add one cup of your preferred pasta and fill the vessel with water.
  • Add a spoonful of oil to prevent sticking, and boil the pasta until it’s al dente (soft but with a slight bite).

How to Make Alfredo Sauce

  • In a pan, heat 50-70 g of butter until melted.
  • Add finely chopped ginger and garlic, and sauté for a few minutes until aromatic.
  • Add 2 tablespoons of all-purpose flour (maida), and stir continuously to create a smooth slurry without lumps.
  • Now take a vessel and heat the milk to bring it to a boil.
  • Slowly add the maida slurry to it, and stir constantly over low heat.
  • Add salt and pepper, and continue stirring until the sauce thickens and becomes creamy.
  • Once thickened, turn off the heat and set the sauce aside.

Bring It All Together:

  • In a deep pan or skillet, melt some butter.
  • Add all the vegetables and sauté on a medium flame for about 5 minutes.
  • Cover the pan and cook for an additional 5-7 minutes, until the raw smell dissipates, but be careful not to overcook—the veggies should be crisp & tender.
  • Pour the prepared Alfredo sauce over the veggies, add the grated cheese, and mix well.
  • Add in the boiled pasta and mix again.
  • Adjust the consistency with a bit of water if needed, and let the pasta simmer for 5-7 minutes.
  • Sprinkle some chilli flakes (you can make your own at home—recipe here) and any other seasonings you like.
  • Turn off the heat.

Your ridiculously yummy and creamy white sauce pasta is ready!

Serve it hot, and pair it with some garlic bread for the ultimate pasta experience.
