It’s an absolute beginner salad recipe but also super delicious. I usually make it when I’m out of options but also want something really filling. The lemon vinegar dressing makes all the difference in this recipe. But you can substitute it with any dressing of your choice, really. Ready to make a bomb recipe with something as simple as eggs? Ingredients

Eggs – 3
Carrots – 2 medium, finely chopped
Capsicum – 1 medium, finely chopped
Cherry tomatoes – 6-8, halved
Onion – 1 small, finely chopped
Cucumbers – ½, finely chopped
Parsley – ½ cup, finely chopped
Garlic – 4 cloves, minced
Salt – 1 tsp
Pepper – 1 tsp
Lemon – 1 whole
Vinegar – 1 tbsp

How to Make an Easy Salad with Eggs

  • Boil the eggs for 8-10 minutes for soft-boiled or 12-15 minutes for hard-boiled, depending on your preference.
  • Once boiled, cut the eggs into pieces however you like.
  • Add all the chopped vegetables to the eggs.

How to Make Lemon Vinegar Dressing

  • Squeeze the juice from 1 lemon.
